Extraordinary dishes at the Golvet restaurant in Berlin Here’s an exploration of some of the most exceptional dishes that turn a meal at Golvet into an unforgettable experience.
Tiger Trout from the Fish Farm
An impeccable starter, the Tiger Trout sets the stage for what’s to come. Sourced from local fish farms that practice sustainable aquaculture, this dish promises freshness and flavor. The trout, known for its delicate flesh and subtle sweetness, is prepared to enhance its natural taste profiles, often accompanied by a light garnish that elevates without overpowering.
Hirschrücken with Cabbage and Red Currant
The main course may feature Hirschrücken – a succulent cut of venison backstrap. This rich meat is perfectly offset by the tartness of red currants, while braised cabbage adds a comforting touch of homeliness. The combination strikes a harmonious balance between gamey robustness and tangy fruitiness.
Pickled Paprika with Granola and Chervil
Innovative vegetarian options abound, such as pickled paprika adorned with crunchy granola and aromatic chervil. This dish showcases how preserving techniques can heighten flavors while providing textural contrast through the use of granola, resulting in an unexpected but delightful symphony of tastes.
Chitarra with Old Grendal and Lovage
Pasta connoisseurs might revel in Chitarra – named after the guitar-stringed tool used to cut it – tossed in aged grendal cheese that adds depth with its nutty undertones. Lovage, akin to celery but with sharper notes, brings freshness to this rich pasta dish.
Wagyu Kagoshima with Imperial Caviar
Catering to luxurious tastes, Wagyu beef from Kagoshima is renowned for its marbling and melt-in-your-mouth texture. When crowned with imperial caviar, each bite becomes a decadent dive into opulence – an intersection of land’s succulence with the sea’s briny pearls.
Nutty with Dried Figs and Blue Cornflower
A dessert or perhaps part of a cheese course could involve ‘Nutty,’ a creation harmonizing creamy cheeses with the sweet chewiness of dried figs. Sprinkled blue cornflowers not only add visual appeal but also introduce subtle floral notes to this nutty delight.
Rosencole with Quince and Bee Nuts
Rosencole might be Golvet’s take on kale – here possibly sweetened by quince which imparts its signature perfume while bee nuts could offer crunchiness along with their honeyed coating; together they make for a side dish that’s anything but ordinary.
Chitarra with Old Grendal and Black Truffle
Elevating the previously mentioned pasta dish even further, black truffles infuse their earthy luxury into each strand of Chitarra. As they are shaved over the top generously, these esteemed fungi transform the meal into one reserved for special occasions.
Pasture-Raised Chicken with Cauliflower and Mango
For those who favor poultry, Golvet serves pasture-raised chicken known for its superior flavor compared to conventional chicken. It pairs excellently with creamy cauliflower puree while mango chutney injects tropical brightness that cuts through the richness perfectly.
Plum Roaster with Radicchio and Tahiti Vanilla
Ending on a sweet note might be Plum Roaster – plums roasted until they’re sticky-sweet alongside bitter radicchio creating that bittersweet magic, all lifted by a hint of exquisite Tahiti vanilla which rounds out this dessert or perhaps even acts as an intriguing palate cleanser.
Each plate at Golvet is carefully constructed not just to satisfy hunger but to tell stories – stories about tradition meeting innovation, about local sourcing melding seamlessly into global gastronomy concepts – making dining here nothing short of extraordinary.
